Healthy Chia Raspberry Dessert Recipe – fast & easy
Combine 2 tbsp chia seeds & 1/3 cup of boiling hot water and let it sit for 5 minutes.
In the meantime:
Grate the rind of 1 lime
Squeeze the juice out of 1 lime
Set them both aside
do the topping:
Add 2 tbsp unsweetened flakes coconut + 2 tsp monk fruit sweetener into a small pan and cook stirring until golden.
Combine soaked chia seeds with a handful of raspberries, 2 tsp of monk fruit sweetener, lime juice and lime rind. Blend until smooth.
Pour the raspberry mixture into a glass. Add the unsweetened coconut vanilla yogurt, then the topping and 3 raspberries.
